We are the first hotel in the Netherlands to be solely powered by wind energy. This doesn't mean that you won’t have a hot shower when it is not windy in Amsterdam. It only means that we don't use a gas stove to cook your breakfast, and no boiler to heat your shower. Only the power of the Dutch windy energy does all the work for us. The fact that the building once served as workplaces and offices of a gas factory makes it ironic, and quite cool. At least that’s what we think.
We have an aquaponic wall where we grow our own vegetables and herbs. To describe aquaponics in a few words: grow plants using fish poo. Doesn't sound very tasty, I know. But believe me you won't taste a thing. Besides the fact that this method is not only very nice to look at, it is a circular system, it helps us grow more food using less resources, and all the vegetables and herbs are free of artificial substances and chemicals.
Thanks to this preservation method, we are able to use our favorite seasonal products throughout the whole year. At Bar Kantoor, many of our dishes contain fermented products, still as local as possible and of course 100% organic. The preservation of food like we do, reduces the food waste and carbon footprint and gives a new life to old bottles and jars, three birds with one stone!
