Instock - the restaurant that fights against food waste
The chefs at Instock create dishes with products that otherwise would go to waste. These products are collected every morning, with their electric food rescue car. Therefore it is always a surprise what the ‘harvest of the day’ will be in their restaurant, and the menu changes every day.
“Instock-cooking” (verb): the preparation of a meal by being creative with the products that one has in stock. On average, their dishes consist for 90 percent of products that would otherwise be thrown away. The last 10 percent is for example olive oil or dairy that they still need to buy. No products past their sell-by date are rescued, as this would be against food safety regulations.
